Cooking Class Schedule  -Spring 2008

Bon Appétit and welcome to the Spring 2008 cooking season.

I am only offering a few classes at the moment but will add more after I figure out my calendar so please check back!

Indian Cooking With Special Guest Chef Suneeta Vaswani

  Thursday, April 10   - 9:30     $50 

Suneeta is not only Houston's but probably one of world's authority on Indian cooking.  Please visit her website (www.suneetavaswani.com) to learn more about her.  Do not miss this great opportunity to take a class -it's not only a cooking class but history as well!  She'll have her new cookbook available as well as her fabulous chutney. This is a demonstration class.

bullet Goa Seafood Curry- A velvety coconut milk curry brimming with shrimp and fish. Accompanied with a tangy salad of diced tomatoes, onion and cilantro.

 

bullet Channa Dal with Tamarind Chutney –Channa dal  ( a variety of garbanzo beans) is sprinkled with a fabulous mix of powdered spices, including mango powder and garam masala and topped with sweet/hot tamarind chutney.

 

bullet Tamarind Chutney -  An outstanding condiment made with tangy tamarind and jaggery, Indian unrefined brown sugar.

 

bullet Cauliflower and Potatoes – A restaurant favorite, these vegetables get a boost of flavor from cumin, ginger and green chiles.

 

bullet Perfect Steamed Rice.

 

bullet Wedding Custard.  – Baked custard perfumed with cardamom, nutmeg and rose extract.

Cinco De Mayo Fiesta

Cinco de Mayo is the most vibrant of Mexican holiday celebrating freedom and liberty.  We'll star with Homemade Margaritas, then onto Quesadillas Nuevas,  Grilled Frontera Steak with Chipotle and Tomatillo Sauces, and Lasso Orzo.  Pecos Bread Pudding with Warm Caramel Sauce concludes the festivities.

Cooking with Fresh Herbs (all new recipes)

 Friday, May 2   - 10AM  $40

  Tuesday, May 6  -   6 PM   $40

Fresh herbs add wonderful flavors to food. We'll talk about buying, storing, and growing herbs.  We will explore some new recipes that use herbs to add flavor and enhance our recipes.  I am still working on the menu but the Chocolate-Mint Truffle Torte is not to be missed!

Registration Info

 Classes are priced individually. Each class is limited to 12 participants. Space is available on a first-come, first-served basis. To reserve a space, call or email for availability and then mail payment to Diane Lestina (at 819 Pine Valley Drive, College Station 77845) with your name, address, phone number and the names of the class/classes you would like to take.  Classes may be cancelled if there are fewer than 8 participants.

 If you need to cancel,  the sooner the better, but you must cancel at least 3 days before the class to receive a refund or credit towards another class. You are welcome to send a friend in your place if you are unable to cancel in time.
