Cooking Class Schedule - Spring 2010

Cooks of all ability levels will enjoy this selection of classes.  All classes will begin with short lecture then participants are divided into groups and cook one of the themed recipes.

After the cooking is done we will enjoy the fruits of our labor.  Classes last approximately 2 1/2 - 3 hours.

 

Sauces for Fish

Tuesday, March 9    6 pm   $40

Friday, March 12      10 am  $40

Learn how to make different sauces for all kinds of fish.  You can use your family’s favorite  fish and vary the sauce each week.  Sauces include Mojo Marinara. Sicilian Sauce, Avocado Cream, Garlic Parsely Breadcrumb , Yogurt Dill and Homemade Tartar Sauce for Crispy Fish Sticks.  

 

Balsamic Vinegar 101

 According to the New York Times, Balsamic Vinegar is a magic potion that stirs food to life.  We will talk about the origins and uses of this magic potion. A Balsamic Vinegar tasting will start the class, and then we will use it in several recipes including Cornmeal and Rosemary Cake with Balsamic Syrup, Balsamic BBQ Sauce for Chicken or Steak and Pork Tenderloin with Balsamic Onion Topping.

As the flowers start to bloom, our cooking becomes all about fresh bright flavors.  Start your dinner with Minted Pea Soup. Your main course can be either Salmon with Asparagus or Herb-Crusted Lamb served with Potatoes Anna.  End with Julia’s spectacular Strawberry Tart.   

 

Vegetable Dishes of Tuscany and Provence

Learn some new recipes where vegetables and grains, enhanced by herbs and cheese, are the stars. These dishes are easy to prepare and full of flavor.  Taste the flavors of Italy and France in Ratatouille, Tian au Riz, Provencal Artichokes, and Spinach and Ricotta Gnocchi.   A fruity Claufouti will complete our feast.

Fun summer drinks and small bites full of flavor--it’s time to entertain!  Watermelon Mojitos with Pork and Red Pepper Skewers with Mango Dipping Sauce and Thai Beef Salad in Cucumber Cups; Peach Bellinis with Grilled Zucchini Rollups with Herbed Cheese and Crispy Salami Bites; Sangria Blanco with  Shrimp, Chile, and Avocado Tostados and Spicy Stuffed Endive Leaves

Registration Info

 Classes are priced individually. Each class is limited to 12 participants. Space is available on a first-come, first-served basis. To reserve a space, call or email for availability and then mail payment to Diane Lestina (at 819 Pine Valley Drive, College Station 77845) with your name, address, phone number and the names of the class/classes you would like to take.  Classes may be cancelled if there are fewer than 8 participants. Please note you are not registered until I have received payment.

 If you need to cancel,  the sooner the better, but you must cancel at least 3 days before the class to receive a refund or credit towards another class. You are welcome to send a friend in your place if you are unable to cancel in time.
