Chicken:

Italian Chicken Bundles -Chunks of Chicken mixed with Ricotta Cheese, Spinach, Green Onions, Parmesan Cheese, and Herbs all wrapped in an Egg Roll Skin Bundle and Baked. Served with an Herb Tomato Sauce.

Black Cherry Chicken – Baked chicken breasts with a black cherry balsamic reduction sauce served with wild rice and glazed carrots.

Chicken and Black Bean Enchiladas -Chicken Strips, Black Beans, Jack Cheese, and Red Bell Peppers in a Mexican Salsa rolled in Flour Tortillas and topped with Cheese and Picante

Aegean Chicken – Sautéed chicken breasts with artichoke hearts, mushrooms, tomatoes and black olives.

Smothered Chicken with Barley – Chicken thighs marinated with a dry spice rub are cooked with sweet red pepper and barley.

Oven-Fried Chicken- Boneless chicken breasts baked in an herb-seasoned crust served with Corn casserole.

Creamy Macaroni, Chicken and Cheese – Elbow Macaroni mixed with a cheddar cheese sauce and julienne chicken breast served with  Green Bean Bundles

Pork:

Maple-Mustard Pork Tenderloin – Lean pork tenderloin is marinated in dijon, maple syrup, and rosemary then roasted.  This is served with caramelized apples and egg noodles.

Cranberry-Balsamic Pork Tenderloin – Lean pork tenderloin is roasted and served with a sauce of pan juices, balsamic vinegar, rosemary, and cranberry sauce.  Served with Cauliflower Puree.

Beef:

Beef Stroganoff: Lean Strips of Beef in a Sherry Mushroom Beef Sauce finished with Sour Cream and served on a Bed of Egg Noodles.

Blade Steaks with Mushrooms – Pan-seared blade steaks are finished with a soy/balsamic sauce and topped with lots of mushrooms.

Beef Madagascar – Lean Strips of Beef in a Rich Green Peppercorn Sauce served with Rice Pilaf and roasted tomatoes.

Flank Steak Fajitas – Grilled flank steak, red and green bell pepper strips, and onions rolled up in flour tortilla served with Roasted Corn Salsa.

Italian Meatloaf -Lean ground sirloin flavored with garlic, tomato, roasted red pepper, basil, provolone and Parmesan cheese and Italian seasonings served with Garlic mashed potatoes.
